Anji Bai Cha Green Tea , known as "Anji White", is a rare and prized tea grown in the village of Anji, located in the Tian Mu mountain area of Zhejiang Province, China.

The name "Bai Cha" (meaning "White of Anji") can be misleading, as the term "white" refers to the pale color of the young leaves, due to a lack of natural pigmentation, a phenomenon similar to vegetal albinism. This particular green tea is rich in beneficial properties and offers a unique and refined flavor profile.

Anji Bai Cha is harvested during a short period, from mid-March until the Qingming Festival. Only the young leaves and freshest shoots are selected, ensuring a uniform, high-quality product.

The processing is carefully controlled at every stage to preserve the freshness and precious natural components, including a concentration of amino acids almost double that of other green teas.

  • Infusion time: 10 seconds for the first infusion, gradually increasing the time for subsequent infusions.
  • Infusions: up to 4-6 infusions, maintaining the fresh and floral flavor.

Western preparation:

  • Dosage: 2-3 grams of leaves per 200 ml cup.
  • Water temperature: 75-80°C.
  • Infusion time: 2-3 minutes.
