Yellow tea is a semi-fermented tea and is obtained through a process similar to that used for green tea. For this type of tea, the leaves are dried very slowly at high humidity. After being harvested, they are stacked on top of each other, forming small piles over which a damp cloth is placed. They are left to dry for at least 20 hours at 80-90% humidity.
After slow oxidation, they are briefly dried, giving them their classic yellowish color.
Yellow tea is more valuable than other types of tea. Chinese dynasties avoided exporting it, instead consuming it only locally, which is why it is little known in the West.
