Its history originates in the Uji region, famous for its shade teas, where the plants are covered with straw or synthetic materials for about 20-25 days before harvest. This technique reduces photosynthesis, increasing the content of amino acids such as theanine, responsible for the umami flavor and silky sweetness.

It is a tea reserved for special occasions or for true connoisseurs, a symbol of Japanese elegance and refinement.

  • Water temperature: 50-60°C.
  • Infusion time: 90-120 seconds.
  • Possibility of making 3-4 infusions, slightly increasing the temperature and time.

Western method (teapot):

  • 3 g of Gyokuro Mikoto per 150 ml of water.
  • Water temperature: 60°C.
  • Infusion time: 2 minutes.
