Before harvesting, the plants are protected from direct sunlight using bamboo mats, a practice that increases the concentration of chlorophyll and amino acids, responsible for the typical sweetness and deep umami.
Harvested in early May, selecting only the apical bud and the first leaves, Gyokuro Asahi develops a unique sensory profile: intense yet refined, rich yet extremely harmonious.
The leaves can be infused two or three times, revealing new shades of umami, vegetal, and minerality with each pass, in an elegant and fascinating progression.
