Tie Guan Yin Oolong Tea , also known as “Iron Goddess of Mercy,” is one of China’s most celebrated teas.

Originating in Anxi County, Fujian Province, this semi-oxidized tea owes its fame to its unique flavor profile and artisanal production, combining tradition and refinement. The Anxi region, with its maritime monsoon climate and optimal tea-growing conditions, produces some of the finest Tie Guan Yin varieties.

With a low level of oxidation , Tie Guan Yin sits midway between green tea and black tea. This process gives the tea a floral and fresh aromatic profile, maintaining the typical complexity of Oolongs. The leaves, twisted and worked by hand, release notes of orchid and magnolia, offering a delicate and lingering sensory experience.

  • dosage: 5 grams of leaves for a 150 ml Gaiwan.
  • water temperature: 90°C.
  • Infusion time: 10-15 seconds for the first infusion, gradually increasing the time for subsequent infusions.
  • Infusions: up to 6-8 infusions, maintaining the floral flavor and freshness.

Western preparation:

  • dosage: 3 grams of leaves per 200 ml cup.
  • water temperature: 90°C.
  • Infusion time: 2-3 minutes.
