Shui Xian Oolong Tea , also known as "Narcissus," is a premium Yan Cha, or "rock tea," native to the Wuyi Mountains of Fujian Province, China. This mountainous region is renowned for its distinctive Oolong teas, whose plants are rooted deep in the rocks, giving the tea a distinctive mineral profile. Shui Xian is harvested in May, ensuring superior-quality leaves that release a unique aromatic bouquet.
The artisanal production of Shui Xian is a meticulous process. After harvesting, the leaves are dried in the sun, subjected to light oxidation, and then carefully rolled and toasted. Charcoal is often used for toasting, a traditional method that enhances the distinctive aromas of this Yan Cha, making it particularly prized by connoisseurs.
