Keemun Black Tea , known in China as red tea, is one of the most famous and appreciated Chinese teas.
Produced in Qimen and Dongshi counties in Anhui province, it is considered a tea of extraordinary quality and great tradition. Introduced during the Guangxu reign at the end of the Qing Dynasty, Keemun is also mentioned in Lu Yu's "Tea Canon," dating back to the Tang Dynasty, attesting to its historical importance.
This tea is produced by carefully selecting leaves and buds from local plantations known as "Zhu Ye" or "Qimes."
The artisanal process involves fermentation followed by high-temperature drying, which gives Keemun its characteristic rich, floral aroma, with delicate fruity and slightly smoky notes.

Oriental preparation (Gong Fu Cha):
- Dosage: 5 grams of leaves for a 150 ml Gaiwan.
- Water temperature: 90°C.
- Infusion time: 10-15 seconds for the first infusion, gradually increasing the time for subsequent infusions.
- Infusions: up to 6-8 infusions, maintaining the rich, floral flavor.
Western preparation:
- Dosage: 3 grams of leaves per 200 ml cup.
- Water temperature: 90°C.
- Infusion time: 3-4 minutes.
